How To Make The Best Zucchini Spread For The Family

This spread can be used to eating various kind of foods, such as crackers, sandwich among others. The recipe preparation is served in 1/4 cup and ideal for 8 people.

A food processor makes the preparation simple. Serve with crackers vegetable sticks or rounds of crusty French bread. It can also be used as a sandwich spread, for example, line a pita half with zucchini spread and stuff with vegetables.

Ingredients:

3 ½ cups unpeeled, shredded zucchini, about 3 small zucchini

1 tablespoon olive oil

2 tablespoon red wine

Vinegar

¼ cup finely chopped fresh parsley or cilantro

1 clove garlic, minced

¼ teaspoon salt (optional)

Freshly ground black pepper to taste

2 tablespoon finely chopped walnuts or pecans

How To Prepare:

Squeeze zucchini to remove excess water. In a blender or work bowl of a food processor fitted with a metal blade, combine zucchini oil, vinegar, parsley or cilantro, garlic, salt and pepper. Process until smooth scraping down sides as needed. Spoon mixture into a serving container and fold in nuts. Cover and chill before serving.
